Measuring tools

are, arguably, among the most important elements of any cook's equipment and must be accurate in order to properly fulfil their function.

*All 'cups' are not the same even if they are so marked, so be safe, purchase from a reputable company and return them if you find them grossly inaccurate. Generally, measuring cup sets are not inter-changeable, so stick to one set only in a cooking session,then at least the relative quantities in your recipe will be correct.
*A level measuring cup should equal 250mls or 8 (fl) ounces.



*Measuring spoons are mainly manufactured in plastic or metal. Some have longer handles which are handy when reaching into tall jars or bottles. It is useful if the sizes are printed in a contrast colour for ease of reading, but this does not happen often. Engraving or embossing in stainless steel is one of the most successful methods of providing easy-to-read numerals. This is not always so successful in plastic as the molding is not always sharp enough. Stick-on labels tend to fall off, eventually.
*1 tsp = 5ml, and 1 tbsp = 15ml (except in Australia where 1 tbsp = 20ml)



SCALES - DIGITAL AND MECHANICAL

*When buying scales, you have the option of choosing digital or mechanical. It is easier to accurately weigh smaller amounts with digital scales, particularly if you use the metric setting where you will be using grams instead of pounds and ounces. The 'tare' feature offered on digital scales can be extremely useful, too, in a variety of situations.



*Generally, though, mechanical scales do just fine for most baking requirements and in fact, both types of scales usually provide a more efficient method of measuring ingredients than do measuring cups.
*The accuracy of a pair of scales can be checked using a coin (nickel) which is specified by the U.S. Mint to weigh 5 gms.
*For cooking, pin-point accuracy in weights around a single gram is only important in special instances, say in weighing coffee for espresso. Any minor inaccuracies in cups or scales can be largely negated by using only one set of cups or scales in a single recipe, ensuring that the amounts of ingredients are relative to each other.
*Proper measuring equipment is extremely important if you want the best results, particularly when baking.Be sure that these tools for the kitchen are the best you can afford!
